Courgette & Mature Cheddar Fritters

Makes 6 thick fritters

215kcal / 15g fat / 13g carbohydrate / 9g protein / 2g fibre

250g courgette

3 medium eggs

100g wholemeal flour

75g mature cheddar (grated)

1/2tsp salt

1/2tsp baking powder

50ml light olive oil for frying

  1. Grate the courgette and mix with the grated cheddar in a bowl.

  2. Add in the baking powder, salt, flour and eggs.

  3. Mix until incorporated but don't beat the mixture or it will become doughy and tough

  4. Heat a little of the oil in a small frying pan or all of the oil if you're doing them all at once in a big pan

  5. When the oil is hot enough for the mixture to sizzle when it touches it, then spoon the fritters in and flatten gently with the back of a spoon

  6. When the underside is brown and crispy, flip the fritters and cook until brown on the other side.

  7. Lift out and place on a draining board or serve immediately

  8. These will keep for 3 days in the fridge but are best served hot so the cheese is gooey!
